How do i run multiple instances of the same application? (video games)?

You could do it with a virtual desktop or three, try vmware fusion, its free and works well. Virtual desktops take alot to run but it looks like you've got the hardware to handle it. Also, if you plan on doing this regularly I would recommend getting four monitors. With two video cards and the money to buy all that hardware it shouldn't be a problem, lol.
